Slow Cooked Pork Shoulder with Apricots, Cinnamon, and Chipotle

Ingredients:

- 5 kg pork shoulder, bone-in
- 1 cup dried apricots
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup apricot preserves
- 2 cinnamon sticks
- 2 chipotle peppers in adobo sauce, minced
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh cilantro, chopped for garnish
Instructions:
It's time to cook the pork shoulder
Add cumin, smoked paprika, salt, and black pepper to the slow cooker
Put in chicken broth, chopped onion, minced garlic, dried apricots, cinnamon sticks, and minced chipotle peppers
Cook on low for 8 to 10 hours, or until the pork is soft enough to cut with a fork
Take out the cinnamon sticks and use two forks to shred the pork once it's done cooking
Add it back to the tasty sauce and mix it in
If you need to, add more seasoning and let it simmer for another 15 to 20 minutes
