Vegan Cranberry Orange Scones with Vanilla Cream Glaze



These vegan cranberry orange scones are a delightful treat perfect for breakfast or brunch. They are light, fluffy, and bursting with tangy cranberry and citrus flavors. Topped with a sweet vanilla cream glaze, they are sure to impress vegans and non-vegans alike.

Ingredients:

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, cold and cubed
  • 1/2 cup dried cranberries
  • Zest of 1 orange
  • 3/4 cup non-dairy milk such as almond or soy
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1-2 tablespoons non-dairy milk
  • 1/2 teaspoon vanilla extract

Instructions:

Preheat your oven to 400F 200C and line a baking sheet with parchment paper

In a large bowl, whisk together flour, sugar, baking powder, and salt

Add cold vegan butter to the dry ingredients and use a pastry cutter or fork to cut it in until the mixture resembles coarse crumbs

Stir in dried cranberries and orange zest

In a separate bowl, mix non-dairy milk and vanilla extract

Slowly pour the wet ingredients into the dry ingredients, stirring until a dough forms

Transfer the dough onto a floured surface and gently knead it a few times until it comes together

Shape the dough into a circle about 1 inch thick

Use a knife to cut the circle into 8 wedges

Place the wedges onto the prepared baking sheet, leaving space between them

Bake for 15-18 minutes, or until the scones are golden brown

While the scones are baking, prepare the glaze by whisking together powdered sugar, non-dairy milk, and vanilla extract until smooth

Once the scones are done, let them cool for a few minutes before drizzling the glaze over the top
