Zucchini Breakfast Cookies
Ingredients:
- 1 cup grated zucchini
- 1 ripe banana, mashed
- 1/4 cup nut butter e

- , almond butter
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups rolled oats
- 1/2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 cup chocolate chips or raisins optional
Instructions:
Warm the oven up to 350F 175C and put parchment paper on a baking sheet
Grate the zucchini and mix it with the mashed banana, nut butter, honey or maple syrup, and vanilla extract in a bowl
Put the baking soda, ground cinnamon, and rolled oats in the bowl
Mix the ingredients together well until they are all mixed in
You can add chocolate chips or raisins for extra flavor if you want to
Use a spoon or cookie scoop to drop spoonfuls of the cookie dough onto the baking sheet that has been prepared
Press down on each spoonful and shape it into a cookie
After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges are golden brown
After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way
