Skillet Stuffed Rigatoni



Italian sausage, rich tomato sauce, and three kinds of cheese come together in skillet baked stuffed rigatoni to make a hearty and comforting dish. It's simple to make and great for a cozy dinner during the week or a get-together with family and friends.

Ingredients:

  • 1 lb rigatoni pasta
  • 1 lb Italian sausage, casings removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can 28 oz crushed tomatoes
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Preheat oven to 375F 190C

In a large skillet, heat olive oil over medium heat

Add diced onion and cook until translucent, about 5 minutes

Add Italian sausage to the skillet, breaking it apart with a spoon, and cook until browned, about 8 minutes

Stir in minced garlic and cook for another 1-2 minutes until fragrant

Add crushed tomatoes, dried oregano, dried basil, salt, and pepper to the skillet

Stir well and let simmer for 10 minutes

Meanwhile, cook rigatoni according to package instructions until al dente

Drain and set aside

Once the sauce has simmered, add cooked rigatoni to the skillet, stirring until well coated

Remove skillet from heat

Spoon ricotta cheese evenly over the rigatoni mixture, then sprinkle with shredded mozzarella and grated Parmesan cheese

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown

Garnish with fresh basil leaves before serving
