Peanut Butter Caramel Stuffed Chocolate Chip Cookies
Ingredients:
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 12 soft caramel candies, unwrapped
Instructions:
Preheat the oven to 350F 175C
In a large bowl, cream together the peanut butter, granulated sugar, brown sugar, and softened butter until smooth and fluffy
Beat in the eggs one at a time, then stir in the vanilla extract
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the chocolate chips
Scoop a tablespoon of cookie dough and flatten it in your palm
Place a caramel candy in the center and wrap the cookie dough around it, forming a ball
Arrange the stuffed cookie dough balls on a baking sheet lined with parchment paper
Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
