Paleo Salted Almond Butter Chocolate Chip Cookies
Ingredients:
- 1 cup almond butter
- 1/4 cup honey or maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup paleo-friendly chocolate chips
- 1/4 cup chopped almonds optional
- Coarse sea salt for sprinkling
Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine almond butter, honey or maple syrup, egg, vanilla extract, baking soda, and salt
Mix until well combined
Fold in the paleo-friendly chocolate chips and chopped almonds if using
Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them apart
Flatten each cookie with a fork, creating a crisscross pattern on top
Sprinkle a small pinch of coarse sea salt on each cookie for a delightful salty contrast
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
